Recipe of the Week – Tacozagna & Espresso Frappes March 30, 2008

I can’t believe it’s been a month since I’ve posted a new recipe! Well, this week I was inspired by Rachael Ray to make today’s dish, Tacozagna. It was very simple and easy. My version was basically whole wheat tortillas, then slightly taco-flavored hamburger, topped with cheese. My friend Giannina and I made two layers of that and then put another layer of tortillas on top and finally cheese on top of that. Once on our plate, we garnished with sour cream and lettuce. It was pretty good and I would make it again.
I have also been craving iced cappuccinos lately, so I whipped up Giada’s espresso frappes. Delicious! They taste similar to Tim Horton’s iced capps, but so much better. Just a note if you decide to make these, only put in a bit of the simple syrup with the espresso to start and then gradually add more to taste. I’m not one for a strong coffee taste, so I put a lot of the syrup in at the beginning and it was a bit sweeter than I would’ve liked.Overall, it was a very successful cooking day and a wonderful girl’s night in with dinner and a movie! [which, btw, was “Dan in Real Life” :)]

Key Lime Pie March 25, 2008

I’ve been going non-stop the last few weeks and therefore haven’t posted. So tonight I will share with you just a quick little recipe that I felt compelled to make, key lime pie. Until tonight, I wasn’t too sure I would like this pie, but I had a craving for it after watching someone make it on food tv. I couldn’t find that particular recipe anywhere on the site, so I searched on google and found this one:

1 graham cracker crust
2/3 c. lime juice
1 can Eagle Brand sweetened milk
8 oz. Cool Whip
Mix lime juice and milk. Slowly add Cool Whip. Pour into crust and refrigerate until firm.

I have to say, it is pretty delicious. I’m sure it would be even better with more ingredients or a home-made crust, but simplicity is a necessity these days. It took probably twenty minutes to juice the key limes, but I think I’ve at least got the hang of it now. 🙂 I decided to freeze it instead of just refrigerate it so it is even more firm.
