Mission 1 complete! June 29, 2009

At the beginning of the year, Mae started their year-long project [divided into three parts: (m)orning, (a)fternoon, and (e)vening] to make a difference in the world by selling a new song each month and donating all the proceeds to specific charities/worthy causes. Our first [(m)orning] challenge was to partner with Habitat for Humanity and build a house for a needy family. I’m happy to report that it is now complete and the family is all moved in! Details in this quick video:

Recipe of the Week – Healthy Pancakes! June 14, 2009

This recipe is absolutely great! I was craving some pancakes this morning and decided to search for a new recipe instead of using the standard ones I always have. I’m so glad I did! It never occurred to me to use flax eggs in pancakes, but I think it made all the difference.

The ingredients, including my few tiny changes:

Dry:
1 1/2 cups whole wheat flour
3 tbsp raw sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
**Mix the dry ingredients well and set aside.**

Wet:
1 1/2 cups soy milk
2 tbsp ground flax seeds mixed with 6 tbsp water
3 tbsp natural apple sauce
1 tsp vanilla extract

**Mix together the wet ingredients and add to the dry. Mix gently until the dry ingredients are just moistened. There should be some lumps remaining in the batter.**

I only had to use a bit of oil in the pan to make these. They’re light, fluffy, and great with vegan butter and pure maple syrup! Makes about 7 medium-sized pancakes.

Hey all! I know it’s been a long time since I’ve posted and I really miss it because there is lots of stuff to tell you about! But life is crazy as usual. I’m so blessed to have gone to PA all last week, during which time I saw my favorite band (MAE) perform in Philly. Awesome show! Also, June 1st was my one-year vegan anniversary! More about both of those at a later date when I have time.

What I want to tell you all about today is Worldwide Moment’s race for $10,000. Ideablob gives away $10k every month to the idea that is voted for the most. Mae was a recipient of that prize a few months ago for their 12 months. 12 songs. 1 goal. idea, which helped in paying for Rhonda Floyd’s house. So we know this is a legit opportunity.
